Basque Cheesecake

So this video on making Basque Cheesecake showed up in my YouTube recommendations and it looked really great. I made it tonight. Super easy, simple ingredients, outstanding finished product.

Fresh out of the oven–it rises a good bit above the rim of the pan, hence the parchment paper.

After cooling. The cake falls in on itself and the color develops a bit more.

MAX FLUFF. The texture is unreal, almost like custard while warm. Firms up as it cools.

Bonus shot of a burger I split with some co-workers at lunch today. Even the six of us couldn’t finish all these fries.
